Herstellung

Phase III mit Hilfe eines Flügelrührers unter langsamen Rühren homogen lösen. Phase II homogen vermengen und den pH-Wert kontrollieren. Wenn nötig auf einen pH-Wert unter 6 mit Milchsäure einstellen. Beide Phasen zusammengeben, homogen vermengen und auf 80 - 85 �C erhitzen. Die Komponenten von Phase I unter Rühren hinzugeben und solange auf Temperatur halten, bis sie komplett eingerührt sind. Die Geschwindigkeit des Rührens sollte so gewählt werden, daß sich die Oberfläche der Emulsion leicht bewegt, so kann das Einrühren von Luft verhindert werden. Die Temperatur 5 Minuten halten und dann langsam abkühlen. Bei ca. 30 �C das Konservierungsmittel zugeben und den Rührvorgang beenden. Zum Schluß gegebenenfalls den pH-Wert regulieren.

Preparation

Mix phase III with stirring in slow motion till it is a homogeneous solution. Mix the components listed under phase II and adjust the pH-value if necessary with lactic acid below 6 and add it to phase III. Heat it up to 80 - 85 �C and add the components of phase I with stirring till complete incorporation of the products. Stir in such a way that remains in continual motion. Avoid incorporation of air. Hold the temperature for 5 minutes and then allow the emulsion to cool down. Finish at approx. 30 �C and add the preservative. Adjust the pH-value if necessary.
