Kaltherstellung im Labormaßstab

1. Die Bestandteile der Fettphase werden bei Raumtemperatur homogen verrührt. Das Aussehen ist durch Zincum N 29 milchig-trüb.
2. Die Wasserphase wird separat gemischt und unter Rühren "sehr langsam", portionsweise zur Fettphase gegeben.
3. Die Emulsion wird 10 Min. nachgerührt und anschließend homogenisiert. Hierbei muß beachtet werden, daß ein der Viskosität angepaßter Homogenisierkopf eingesetzt wird. Intensives Homogenisieren kann zur Erhöhung der Viskosität im Endprodukt führen.

Preparation in the laboratory / cold processed

1. Mix components of phase I at room temperature until uniform. An opaque-milky appearance results do to Zincum N 29.
2. Separately mix components of phase II. Add slowly to phase I while stirring.
3. Stir thoroughly for 10 min. for the emulsion form, then homogenize mechanically by means of a suitable dispersion unit conform to the viscosity. Excessive homogenizing can lead to an increase of the final viscosity.
